Accordion Potato Skewers are the best! They are essentially part waffle fries, part hassleback fries, and have a simple lattice look. They are super crispy on the outside and tender on the inside! Honestly, I love potatoes in any shape, form, or fashion, but having them stretched out, revealing a seemingly intricate pattern, makes them even more enjoyable!
Accordion potatoes are perfect if you want to elevate your normal potato side dish! With such an eye-catching shape, they are perfect for an impressive dish to wow your guest! And get this, they are SUPER easy to make!
It took me a couple of tries to get into the groove of slicing the potatoes, but once I did, I was able to make the perfect accordion shape each time! So here is a step-by-step recipe walk-through so you can make them perfectly! I promise you, it’s much easier to make than it looks!
What You Need To Make Accordion Potato Skewers:
Potatoes: You can use whatever potatoes you prefer. I used russet potatoes. Yukon Gold and sweet potatoes also work well for this recipe.
Garlic Butter Mixture: The garlic herb mixture coats the potatoes and provides a ton of flavor. You can use vegan butter if you prefer, or you can swap out the butter and use olive oil.
Skewers: The skewers help to serve as a base for cutting the potatoes so that you can make the accordion pattern. You also pierce the potatoes with the skewers, then stretch the potatoes and curve them to create the complete accordion look. (If you have time, soak the skewers in water for at least 30 minutes before using to prevent them from burning while in the oven.)

How To Cut Accordion Potatoes Shape
STEP 1: Use a potato peeler to remove the skin of the potato. Then, cut the round ends off the potato. Cut the potato lengthwise into 1/4 – 3/8 inch slices. Do not cut larger than 1/2 inch.
STEP 2: Place the potato horizontally. Place the skewer on both sides of the potato. Use skewers as a base so that you do not cut through the potato and cut vertical lines, about .0625 inches (1/16″) apart. Keep the lines close to each other so you make the accordion shape.
STEP 3: Flip the potato over, keeping the wooden skewers on the sides, and cut diagonal lines.
STEP 4: Push the skewer through the potato. (I find it best to leave the potato on the cutting board, place my hand over the potato to hold it down, and gently push the skewer through the center of the potato. Please be careful so that you do not pierce yourself with the skewer.) Gently stretch out the potato, starting with the bottom and work towards the middle.
STEP 5: While slicing the potatoes, keep the potatoes that you have already cut in cold water. This helps to keep the potatoes from turning brown. This also helps to break down the excess starch which will help make delicious crispy potatoes when they are baked
STEP 6: IN a small bowl, combine the ingredients for the garlic butter mixture Then, brush the garlic-herb butter onto both sides of the potatoes.
STEP 7: Place the potatoes in a pre-heated oven at 425°F for about 40 minutes flipping gently halfway through. Depending on the size you cut the potatoes, they may need more time (+5 minutes or so) in the oven to get crispy.
STEP 8: Enjoy! The potatoes are done once they have crispy edges and are golden brown on the outside. Allow the potatoes to cool for a few minutes before serving.
Tips To Make The Perfect Accordion Potatoes
- Choose large, long potatoes for the best results. Ones that are at least 6-8 inches work well
- You can leave the skin on or peel the potatoes. The choice is yours!
- When slicing the potatoes, make sure not to slice them all the way through. Use the skewers as a base to prevent slicing through the potatoes.
- Slice the potatoes thick enough to pierce the skewer, but not too thick that they break the skewer. Larger slices are slightly harder to manipulate and also do not get as crispy when baked.
- Make sure your oven is hot and preheated before placing the potatoes in to bake. A hot oven is necessary to make crispy baked potatoes.
How to Make Accordion Potatoes in the Air Fryer
Follow the same direction as above. When ready to cook your accordion potatoes place them in the air fryer at 375°F for 15-17 minutes, gently flipping halfway through. (do not overcrowd the skewers) Repeat until all the skewers are fully cooked.
Toppings For Your Accordion Potatoes
- Ketchup: You can use regular ketchup or spice your ketchup a bit by adding Sriracha and curry power. Simply mix together: 3 tbsp ketchup, with 3 tbsp Sriracha, and 1/2 tsp curry powder! It’s delicious!
- Cheese: Add shredded cheddar or parmesan cheese for additional flavor. You can also use vegan cheese or mix nutritional yeast into the garlic butter mixture.
- Ranch Dressing: Yes, some people dip their potatoes in ranch dressing! You can use regular ranch dressing. or try my Hemp Seed Ranch for a nutrient-dense tasty ranch option.
- More Sauces: You can dip your potatoes in whatever you fancy. Try BBQ sauce, mustard, hot sauce, or avocado crema.

Can You Make These Accordion Potato Skewers Ahead?
Most definitely! If you would like to make this dish ahead, simply slice the potatoes, cover them with water in a large bowl, and place keep the bowl in the fridge. You can leave the potatoes covered in water in the fridge for up to 3 days.
How To Store Leftover Potato Skewers?
Store any leftover potatoes in an airtight container and place them in the refrigerator for up to 2 days. The best way to rewarm the potato skewers is in the oven. Place them in a pre-heated oven at 350°F for 5 minutes, or until heated through. They will be just as crispy and delicious as when you first made them!
