This gluten-free gravy is delicious and impressive enough for Thanksgiving or Christmas Dinner, yet easy enough to make at any time you need gravy. It is a simple recipe that is ready in less than 10 minutes. No one would ever guess it is gluten-free! The flavors are robust and perfect for drizzling on mashed potatoes, turkey, pot roast, biscuits, or whatever you choose.

Ingredients You Need To Make Gluten-Free Gravy

  • Thickener: To mimic traditional gravy and keep this recipe simple and easy, gluten-free all-purpose flour is the thicker used. Make sure your gluten-free blend contains xanthan gum. You can also use cornstarch if you prefer. (Use your gluten-free flour blend of choice. Bob’s Red Mills 1:1 Gluten-free flour and King Arthur, Gluten-Free Measure for Measure Flour are great options.) PLEASE NOTE: If you are not sensitive to gluten, you can use regular flour instead of gluten-free flour.
  • Broth: You can use chicken broth, turkey broth, vegetable broth or stock. Use your favorite brand or use a bouillon cube with water. (You can even use beef broth to make beef gravy)
  • Seasonings and Fresh Herbs: Garlic powder, sea salt, pepper, and fresh thyme add delicious flavor to the gravy. A dash of coconut aminos or Worcestershire sauce gives the gravy a rich, umami flavor.

How To Make Gluten-Free Gravy

  1. MAKE THE ROUX: In a large skillet over medium-high heat, melt the butter. When the butter is melted and sizzling, whisk in the flour a tablespoon at a time. Stir the mixture continuously until it begins to turn golden brown and smells toasty, about 2-3 minutes.
    • PLEASE NOTE: If using gluten-free flour, your mixture may not turn into a paste. This is okay, just be sure to whisk the mixture over medium-high heat for 2-3 minutes, until the butter turns deep golden brown and the flour is fully dissolved with no clumps remaining.   2. POUR IN THE LIQUID: Slowly pour in the broth one cup at a time and whisk until smooth. Reduce to medium-low heat and bring the gravy to a simmer. As the gravy simmers it will thicken. Allow the mixture to simmer for 1-2 minutes, stirring continuously until the gravy begins to bubble.
  3. ADJUST THE CONSISTENCY AS DESIRED: If the gravy is too thick, whisk in a bit more broth. If you would like to make the gravy thicker, allow it to simmer and come to a low boil for an additional minute or two, stirring occasionally (the longer it simmers, the thicker the gravy gets).
  4. SEASON TO TASTE: Whisk in salt, black pepper, garlic powder, thyme, and coconut aminos (optional). Taste the gravy and adjust with spices as desired.

  • MAKE IT VEGAN: Use vegan butter or dairy-free butter and use vegetable broth.
  • USE PAN DRIPPINGS: Make turkey gravy by using the turkey drippings from the pan (or use turkey broth). If using pan drippings the stock will be well seasoned. Be sure to taste the gravy before adding spices and adjust as needed.
  • MAKE BEEF BROTH: Use beef stock to make beef broth. Follow the recipe just the same and you can use beef gravy for your pot roast or meatballs.
  • USE LOTS OF HERBS: Try adding chopped rosemary, sage, or parsley to your gravy. You can also add different spices like poultry seasoning, onion powder, or even smoked paprika for a smoky flavor.
  • TRY DIFFERENT FLOUR: A lot of recipes use sweet rice flour. I opt for a gluten-free flour blend because it is much easier to find and readily available. How To Make Gravy With Pan Drippings?

To make pan drippings for gravy, add (2 cups) water or broth of choice to the hot baking pan after the turkey or chicken is fully cooked (and has been removed from the pan). Use a rubber spatula to scrape up any of the brown bits on the pan and mix that into the liquid. Then, pour the liquid into a fat separate. Use the liquid to make your gravy.

How Can I Thick Gravy Without Flour Or Cornflour?

You can use arrowroot starch, potato starch, tapioca starch, oat flour, or gelatin. If you do not want to add any thickeners, you can always reduce your sauce by simmering it to cook down the liquid.

Storing Leftovers and Freezing Your Gluten-Free Gravy

Allow the gravy to cool completely, then transfer it into an airtight container. Store it in the refrigerator for up to 3 days. To freeze, transfer the gravy into a freezer-safe container and freeze for up to 3 months. Thaw overnight in the fridge when ready to rewarm and use.
