- Raw Cashews: Cashews are the base for this sauce. Before blending, the cashews need to be soaked in boiled water. Soaking the cashews helps soften them, which makes them easier to process and helps to increase their nutrient availability.
- Chipotle Peppers In Adobo Sauce: You can easily find chipotle peppers in adobo sauce at your local grocery store.
- Fresh Garlic: The garlic provides a deep savory flavor.
- Lemon Juice: The lemon helps provide a little zest and acts as a natural preservative.
- Almond Milk: Use almond milk or your favorite non-dairy milk. This helps to make the sauce extra creamy.
- Maple Syrup: The maple syrup cuts any bitterness from the sauce and helps adjust the spice level of the sauce .
How To Make Vegan Chipotle Cashew Cream
- Bring a small pot of water to a boil. Pour the boiled water over a bowl of raw cashews and soak for 20-25 minutes. After soaking, drain the cashews and discard the water.
- Add the cashews to a high-powered blender along with the remaining ingredients. Blend until smooth, scraping down the sides as needed. Taste and adjust: add more adobo sauce to make it a bit spicer, add a splash of almond milk or water to thin out the sauce, add more maple syrup or agave to make it less spicy.
