What is Buckwheat?
Buckwheat is technically a seed! It is a seed harvested from the Fagopyrum esculentum, a plant closely related to rhubarb. It is considered a pseudocereal because in cooking it is used the same as cereals and other grains. You can purchase buckwheat flour or buckwheat groats. The groats are often used to make a creamy porridge, but you can also grind the groats to make your own homemade buckwheat flour! - Wet Ingredients: Vegan Buttermilk (Non-Dairy Milk + Lemon or ACV), Apple Sauce, Melted Vegan Butter, Vanilla Extract
How To Make Buckwheat Flour?
Making buckwheat flour is easy! Simply add 1/2 cup buckwheat groats into a high-powered blender and blend until the groats become a super fine texture (approximately 45-60 seconds). Repeat this step to make as much buckwheat flour as you need. Transfer any unused flour into an airtight jar or container.How To Make Homemade Vegan Buckwheat Pancakes?
- Add the lemon juice (or ACV) to the Non-dairy milk and set aside. Let it sit for 5-7 minutes to curdle.
- Mix the buckwheat flour (plus regular flour if using), baking powder, sugar, cinnamon, and salt into a large bowl.
- Add the remaining ingredients and gently mix until the ingredients are incorporated. (Do not overmix, some lumps are okay)
- Let the batter rest for 10 minutes.
- Heat a non-stick skillet over medium-low heat. Add a bit of vegan butter or spray lightly with oil. Then scoop about 1/3 of the batter and pour it into the pan. Cook until bubbles start to appear and the edges look dry, about 2-3 minutes. Then, flip the pancake and cook for 1-2 minutes. Repeat until all the batter is gone.
- Serve with maple syrup, fresh fruit, and enjoy!

- Use 3/4 cup buckwheat flour + 3/4 cup GF All-Purpose flour
- Fold in 1/2 cup fresh blueberries (or berries of choice) into the batter
