This chickpea flatbread recipe makes dense, chewy bread that will satisfy your cravings! It’s a versatile gluten-free flatbread similar to socca, a popular street food from France and Italy. While the ingredients are the same, we bake it in the oven instead of a cast iron skillet.

Technically, you can make this recipe with just two ingredients – chickpea flour and warm water – but I love the flavor oil and spices add! And I appreciate how versatile chickpea flatbread is. From the ingredients to all its purposes, you will find endless ways to enjoy it.

Ingredients You’ll Need

  • Chickpea flour: This is the main ingredient, finely ground chickpeas (garbanzo beans). It’s packed with protein and fiber and has an earthy, nutty taste. I use Bob’s Red Mills Chickpea Flour.
  • Warm water: You need liquid to form a batter. This also helps us adjust the consistency so it’s perfectly thin or thick (whichever you prefer).
  • Olive oil and Seasoning: While optional, the following spices and herbs add great flavor to this gluten-free flatbread. Try adding salt, black pepper, Italian seasoning, and fresh parsley for an herby, savory taste.

Tips

  • Use warm water to achieve the best texture. It mixes more easily and creates a smooth batter.
  • If you have time, let the batter sit for 30 minutes before transferring into the oven. This allows the flour to fully hydrate, resulting in a better texture.
  • Mix well for a clump-free batter. Smooth batter results in a flatbread that’s lump-free with evenly distributed flavor.
  • Spread the batter evenly on the baking tray for uniform cooking. An even layer ensures that the flatbread bakes consistently, avoiding overcooked edges and undercooked centers.
  • Keep an eye on the baking time based on the thickness of the batter. A thicker batter may need more time, while a thinner batter will cook faster. Adjust accordingly to avoid burning or underbaking.
  • Let the flatbread cool slightly before removing it from the tray. This helps it set and makes it easier to handle without breaking.
