homemade lemonade infused with herbs and honey

This isn’t your average lemonade. We’re infusing it with fresh mint, rosemary, and dill, then sweetening it naturally with raw honey. This is my go-to lemonade recipe for that I make every summer for picnics, barbecues, or whenever I am hosting.

Mint adds a cooling effect and can help soothe digestion. Rosemary brings a piney, earthy aroma and is rich in antioxidants. And dill? It’s not just for pickles—it adds a fresh, citrusy twist and supports detoxification.

TWO WAYS TO INFUSE YOUR LEMONADE

INFUSE OVERNIGHT: I like to add the herbs directly to the lemonade and let the mixture infuse overnight. All the flavor marry and the result is an ultra-refreshing lemonade that has the perfect level or tart, sweetness, and earthiness from the herbs.

STEEP THE WATER WITH HERBS: For a stronger herbal taste, you can steep the herbs in hot water to bring out there flavor and natural health benefits. Just steep the herbs in hot water for 5–10 minutes, then strain and mix with fresh lemon juice, raw honey, and cold filtered water. Chill and serve over ice. This is the quick method AND the flavor of the herbs is more prominent. win-win!

WAYS TO NATURALLY SWEETEN LEMONADE

Most lemonade is made with a sugary simple syrup. A sweetener is definitely needed to balance out the tartness of the lemon juice, but I prefer natural sweeteners. Here are a few great options:

  • Raw Honey: Natural sugars in honey (mainly glucose and fructose) can aid water absorption in the small intestine, especially when paired with sodium. This is the basic principle behind oral rehydration solutions. Honey also contains trace minerals like potassium, calcium, and magnesium, which support electrolyte balance and hydration.
  • Agave syrup is rich in natural fructose, which can support water absorption when combined with electrolytes like sodium. While it doesn’t contain as many minerals as honey, it has a low glycemic index and is a gentle sweetener for those sensitive to blood sugar spikes. Its smooth texture and mild flavor make it great for infusions and hydrating drinks.
  • Date Syrup: Made from whole dates, date syrup provides a mix of natural sugars (glucose and fructose) that help with fluid absorption in the gut, promoting hydration. Unlike many sweeteners, it also contains fiber, potassium, magnesium, and antioxidants—all of which support muscle function, electrolyte balance, and overall hydration.
