This crispy baked okra recipe is one of those simple recipes that will completely change how you look at okra. Here’s What You’ll Need

You’ll need okra, olive oil, fresh garlic, a variety of fresh herbs, salt and pepper. I like to add sliced jalapeno for a little heat.

Step 1: Prep the okra and jalapeño.
Preheat the oven to 450°F. Rinse the okra and jalapeño, dry them well, then trim the ends and cut everything into ½-inch pieces.

Step 2: Make the herb mixture.
In a small bowl, stir together the chopped herbs, olive oil, garlic, crushed red pepper, salt, and black pepper until well combined. This flavorful mixture is what gives the okra its savory, slightly spicy coating.

Step 3: Toss everything together.
Pour the herb mixture over the chopped okra and jalapeño, then toss until every piece is evenly coated. Spread the mixture out so the okra can roast and crisp up instead of steaming.

Step 4: Bake until golden and crispy.
Bake for about 20 minutes, or until the okra is golden brown around the edges and tender in the center. Serve it hot while it is at its crispiest, and do not be surprised if you find yourself snacking on it straight from the pan!

Easy Garlic-Herb Baked Okra
Ingredients
- 2 lbs Okra
- 1/3 Olive Oil
- 6 Garlic Cloves, minced
- 4 Jalapenos, sliced (optional)
- 1/3 cup Fresh Herbs- rosemary, thyme, sage, oregano (roughly chopped)
- 1/2 tsp red crushed pepper
- Salt and Pepper, to taste
Instructions
- Preheat the oven to 450°F degrees.
- Rinse the okra and jalapeno and dry with a paper towel. Trim the ends and stems, then cut into 1/2 in pieces. Transfer to a medium-sized bowl and set aside.
- In a small bowl, combine the chopped herbs, olive oil, garlic cloves, red crushed pepper, salt, and pepper. Pour the herb mixture onto the okra and mix well.
- Bake the okra for 20 minutes. It should be golden brown on the outside and tender.
- Serve hot and enjoy their crispy texture.

Excellent recipe! I’ve always enjoyed okra sautéed, but never roasted. I didn’t have the fresh herbs, but used some of the dry herbs. Came out great! Will definitely make this recipe again. Thank you for sharing!
