Ingredients You’ll Need
Homemade Strawberry Jam
- Fresh Strawberries: Rinsed and hulled.
- Coconut Sugar or Brown Sugar: Whichever you prefer.
- Lemon Juice: This brightens the flavor but also helps the jam set.
- Chia Seeds: For some added nutrients and texture, consider this optional addition.
Maple Cream Cheese Mixture
- Cream Cheese: Use it at room temperature (vegan or regular).
- Maple Syrup: Use your favorite brand.
- Vanilla Extract
- Lemon Juice
French Toast
- Eggs: This is the base of the rich custard.
- Canned Light Coconut Milk: You need a thick liquid so the egg mixture is creamy. Use full fat coconut milk, half and half, or heavy whipping cream.
- Brown Sugar: To sweeten.
- Vanilla Extract: This rounds out the overall flavor so the strawberry croissants don’t taste too eggy.
- Spices: For the warm, cozy flavor you expect from croissant french toast, cinnamon and nutmeg are absolutely necessary.
- Butter: plus more as needed (for the pan)
- Croissants: They should be a day old and not fresh so they can soak up the egg custard. Use gluten-free or regular based on your preference.
How to Make Strawberry Croissant French Toast
MAKE HOMEMADE STRAWBERRY JAM (OPTIONAL).
Add the ingredients to a large saucepan over medium heat. Stir over medium heat until sugar dissolves. Add chia seeds, optional. Increase heat to med-high and bring to a rolling boil.
Stir and mash the strawberries while stirring as the mixture continues to boil. Allow it to boil for 10 minutes, or until it thickens and bubbles completely cover the top of the jam. Transfer to a jaw and let cool at room temp. Store in the fridge for a week. (makes about 1 ½ cups jam)
MAKE MAPLE CREAM CHEESE MIXTURE.
In a small bowl, combine the cream cheese, maple syrup, vanilla extract, and lemon juice. Whisk the ingredients until smooth. (Alternatively, you can add the ingredients into a blender and blend until smooth)
Assemble And Make The Croissant French Toast
PREPARE. Preheat the oven to 200°F. Combine the ingredients for the french toast mixture (except butter) in a large shallow bowl.
FILL CROISSANTS. Slice the croissants lengthwise, but be sure to not cut all the way through. Spread a heaping amount of strawberry jam on one side of the croissants and maple cream cheese on the other. Close the croissant.
HEAT CROISSANTS. Heat a large skillet over medium heat and coat with nonstick spray or butter. Dip the croissant into the french toast mixture. Letting it soak on both sides for about 5-10 seconds each side (do not soak too long or the french toast will be soggy). Let excess liquid to drip back into the bowl.
COOK until golden brown on one side, about 2-4 minutes per side. Flip and continue to cook until golden brown on the second. Remove from the heat and transfer to prepared a parchment-lined baking sheet. Keep warm in the oven until serving time. Repeat with remaining stuffed croissants.
ENJOY. Serve with maple syrup, powdered sugar, whipped cream, and strawberry slices as desired.

- JAM. You can use store-bought jam to make this recipe easier. Or if strawberries aren’t your thing, try my homemade blueberry jam instead.
- CROISSANT FRENCH TOAST WITHOUT THE STUFFING. Skip the stuffing and use the jam and maple cream cheese to serve on top. Instead of having stuffed french toast, slice the croissants completely in half, soak each side in the egg custard mixture, and cook as normal– 2-3 minutes on each side until golden brown.
Tips To Nail the Recipe
- The best bread to use for french toast is thick and stale. Croissants are thick but you need to purchase them a day or two ahead so they are sturdy enough to withstand being stuffed and soaked.
- Don’t soak the strawberry croissants for too long (more than 15 seconds on each side). Otherwise, they’ll be soggy.
- Keep the french toast warm as you cook each slice by placing them on a sheet pan in the oven set to 200°F.
Storage
REFRIGERATE. When the strawberry croissant french toast has cooled, store leftovers in an airtight container in the refrigerator for up to 2 days.
FREEZE. For longer storage, freeze them with parchment paper between each slice. It will last for a month.
REHEAT. To reheat, warm up in an oven for about 10 minutes.
