Hasselback Waffle Potatoes Recipe
Hasselback waffle potatoes is another Tiktok potato trend that I am totally here for! I’m not sure who loves potatoes more, me or Tiktok users I love potatoes in and shape, form, or style. So, slicing them up and making fun designs is always a good idea in my book!
There is never a shortage of viral TikTok potato recipes! When I shared the accordion potatoes, they instantly became super popular on my site and Pinterest. Since sharing the recipe, I’ve wanted to share something similar but a bit easier to do, which resulted in these waffle potatoes!
These waffle potatoes are crispy, warm, buttery, herbaceous perfectly baked, OR air-fried potatoes! And did I mention that they are incredibly easy to make!?
Here’s What You Need To Make Crispy Waffle Potatoes:
- Russet Potatoes: russet potatoes work best when making crispy potatoes. You can also use yukon gold potatoes.
- Olive oil: Use high quality olive oil or avocado oil.
- Unsalted butter: You can use regular unsalted butter. If you want make these potatoes vegan, use vegan butter, like Miyoko’s Cultured Vegan Butter Or Earth Balance Orignal Buttery Spread.
- Garlic Cloves: Freshly minced garlic is used to make the garlic butter. Fresh garlic works best, but if you do not have it, you can use garlic powder.
- Fresh parsley: The fresh parsley gives the garlic butter a delicious flavor. Be sure to reserve a tablespoon of fresh parsley to use for garnish.
- Seasonings: You’ll need salt, pepper, dried oregano, and paprika.
- Optional: Fresh grated parmesan cheese. Sprinkle parmesan cheese onto the potatoes during the last 10 minutes of cooking to give the potatoes a rich cheesy flavor.
How To Make Hasselback Waffle Potatoes In The Oven
- Preheat the oven to 425°F
- Thoroughly clean and peel the potatoes. Then, cut the ends of the potatoes to shape them into a square. Cut the potato lengthwise into ½ – ¾ inch thick slices.
- Place the potato horizontally and place the skewer (or chopstick) on both sides of the potato. Use the skewers as a base and cut vertical lines that are ¼ – ⅜ inches apart.
- Rotate the potato and cut lines ¼ -⅜ inches across to make a grid pattern. While you are slicing the potatoes, keep the potatoes that you have already cut in cold water. This helps to keep the potatoes from turning brown. This also helps to break down the excess starch which will help make delicious crispy potatoes when they are baked.
- Prepare the garlic butter by mixing the remaining ingredients together (add parmesan cheese if desired).
- Place the potatoes on a parchment-lined baking sheet. Use a clean cloth or paper towel to wipe any excess water.
- Brush the garlic-herb butter onto both sides of the potatoes. Save at least a third of the garlic butter sauce to use later.
- Place the potatoes in the oven for 25 minutes, flipping halfway through. Then, brush the potatoes with the remaining garlic butter sauce and bake for an additional 10-15 minutes. Once they are done the potatoes will have crispy edges and a golden brown center.
- Squeeze lemon juice over the cooked potatoes and garnish with parsley (and parmesan cheese, if desired). Enjoy!
How To Make Hasselback Waffle Potatoes In The Air Fryer

- Place the potato slices in a single layer in the basket of the air fryer. (Do not layer the potatoes on top of each other).
- Cook at 400°F for 15 minutes. Then flip the potatoes and cook for another 10 minutes at 400°F.
- Flip the potatoes once more, brush the tops with the garlic butter mixture, and cook in the air fryer for an additional 7-10 minutes at 400°F. Once they are done the potatoes will have crispy edges and a golden brown center.
- Squeeze lemon juice over the cooked potatoes and garnish with parsley (and parmesan cheese, if desired). Enjoy!

How To Store Leftover Roasted Potatoes?
You can store any leftover crispy potatoes in the refrigerator in an airtight container for up to 3 days. To reheat the potatoes and get the same crisp texture, reheat them in a preheated oven at 350°F for 3-5 minutes, or an air fryer.
