Loaded Sweet Potato Nachos

These Loaded Sweet Potato Nachos are made with perfectly seasoned sweet potato rounds, Cuban-style black beans, spicy salsa, and guacamole. Drizzle some cilantro avocado crema and vegan cheese on top and you have the perfect healthy snack!

Ingredients

  • 3 Large Sweet Potatoes
  • 1 can Black Beans
  • 1 Large Avocado
  • 1 cup Salsa
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 1/2 tsp Chili Powder
  • Salt & Pepper, as desired
  • 1-2 Limes, Juiced
  • 1-2 tbsp Olive Oil

Instructions

  • Preheat the oven to 425°F.
  • Cut the sweet potatoes into 1/4" dials. Then, transfer the dials into a medium-sized bowl and season with smoked paprika, chili powder, cumin, salt, pepper, and a tablespoon or two of olive oil.
  • Then arrange all of the dials onto a parchment-lined baking sheet and transfer them to the preheated oven. Roast the potatoes for 15 minutes and then remove them from the oven and flip each dial onto the other side. Bake for an additional 15 minutes.
  • While the sweet potatoes are in the oven, prepare the toppings. Warm the black beans, adding lime, salt and pepper to taste. Smash Avocado with 1 lime juiced and ~1/2 tsp salt.
  • Transfer the sweet potatoes to a plate and top with your favorite toppings
