Ingredients

  • 1 lb Ground Bison
  • 1/2 tsp Sea Salt, or to taste
  • 1/2 tsp Freshly Ground Pepper, or to taste
  • 3 Cloves Garlic, minced
  • 1/4 Onion, finely chopped (or one shallot finely chopped)
  • 1/2 tsp Chili Powder (optional)
  • 1/2 tsp Cumin (optional)
  • 1/2 tsp Red Pepper Flakes (optional)
  • 1 Jalapeno Peppers, seeded and minced (optional)
  • 2 Habanero Peppers, seeded and minced (optional)
  • 2 tbsp Cilantro, chopped (optional)
  • 2 tbsp Olive Oil for cooking the burgers

Grill Instructions

  • Preheat the Grill: Heat your grill to medium-high, around 400-450°F. Bison is leaner than beef, so it cooks faster. Keep the grill at medium to prevent overcooking.
  • Prep the Bison Patties: In a large bowl, combine the ground bison, salt, pepper, and optional add-ins. Gently form into patties. Bison is lean, so avoid overworking the meat, as it can become tough.
    Make a small indentation in the center of each patty to prevent it from puffing up while grilling.
  • Lightly oil the grill grate help prevent the burgers from sticking on the grill
  • Grill the Patties: Place the patties on the preheated grill.
    Cook for 3-4 minutes on one side, then flip. Grill for another 3-4 minutes for medium-rare to medium (internal temperature should be around 135-145°F). Be careful not to overcook, as bison can dry out quickly due to its low fat content.
    If you prefer them more well-done, cook for an additional 1-2 minutes.
  • Assemble and enjoy: Add your favorite toppings and serve on a bun or lettuce wrap. Enjoy!
