Preheat the oven to 425°F.
Cut the sweet potatoes into 1/4 inch slices by first cutting the potatoes into thirds or fourths (depending on how large potato is) lengthwise. Then, cut the slices into long fry-like pieces (refer to images above)
In a large bowl, add the sliced sweet potato, seasonings and oil. Mix thoroughly so that all the slices are evenly coated.
Transfer the sweet potato slices onto a lined baking sheet. Then, transfer into the oven and roast for 30 minutes, flipping the fries halfway through. They should appear golden with slightly browned edges when they are finished; cooked to perfection!
