Trim the spiky edges and ends off a fresh aloe leaf and soak in filtered water for 30-60 minutes.
Slice away the outer green skin. Cut the clear gel into chunks and soak in filtered water for 30–60 minutes to help remove any remaining bitterness.
Drain, add a quarter cup of water if desired, then blend until smooth. Strain if desired.
Make The Lemonade
Add fresh aloe juice to a large pitcher. Juice the lemons and pour into the pitcher.
Add raw honey, stirring until the honey is fully dissolved. Add sprigs of fresh mint. Then, top with filtered water
Cover and refrigerate for at least 2 hours to let the flavors infuse. Serve chilled, with ice if desired. The flavor deepens as it sits and it keeps beautifully in the fridge for up to 3 days.

Use only food-grade Aloe barbadensis miller and avoid the yellow latex layer just under the skin.
