Ingredients

  • 1 lb Ground meat of choice (beef, bison, chicken, pork, venison) I like to use ground bison
  • 1 Green Pepper, sliced
  • 1 Red Pepper, sliced
  • 1/2 Yellow Pepper, sliced optional
  • 1 Small Onion
  • 1/2 Head of Cauliflower can sub with broccoli
  • 1/4 cup Broth (or water) to steam veggies optional
  • Salt and Pepper to taste
  • 2 teaspoons Cooking oil of choice

FOR THE GARLIC GINGER SAUCE

  • 1/3 cup Coconut Amino (or soy sauce)
  • 3 tablespoons Coconut or Brown Sugar
  • 2 tablespoons Garlic, minced plus more to taste
  • 2 tablespoons Ginger, minced plus more to taste
  • 1-2 teaspoons Chili Sauce optional

Instructions

  • In a large pan over medium heat, add a bit of cooking oil then add in the sliced veggies. Saute for about 5 minutes. Then, pour in the broth, cover the pan with a lid, and steam the veggies until tender, about 5 minutes.
    While the veggies are cooking, whisk together the ingredients for the sauce in a small bowl
  • Remove the veggies from the pan, add the ground meat and cook until browned and cooked through. Season with salt and pepper as desired
  • Add sauce to the pan with the meat. Stir and let it simmer for a 2-3 minutes. Then, add the cooked veggies and saute for an additional minute.
  • Enjoy as is or serve with quinoa, sweet potatoes, or rice.
