Lychee Tea

Lychee tea is a sweet, delicious fruit infused green iced tea with floral notes. Enjoy a glass of lychee iced tea on a hot summer day as a cool, refreshing beverage. (This drink is gluten-free and dairy-free.)

Ingredients

  • 1 can Lychees + the liquid syrup (20 oz, 567g)  if using fresh lychees, see note**
  • 4 cups Water
  • 5 Jasmine Green Tea Bags
  • 2 tbsp Agave Syrup or Honey plus more to taste
  • 3-5 Fresh Mint Sprigs
  • ½ Lemon sliced thin

Instructions

  • In a tea kettle or saucepan, bring the water to a boil.
  • Open the can of lychee and remove about 6-7 lychees from the can and set aside. Pour the remaining lychee and lychee syrup into a blender and blend until pureed.
  • Pour the blended lychees into a pitcher. Feel free to strain if you do not want bits of lychee in your drink.
  • Add the mint, lemon, reserved lychee, and tea bags to the pitcher. Pour hot water over the ingredients and let it steep for 3-5 minutes. Adjust the steeping time based on your preference for tea strength.
  • Remove the tea bags from the pitcher and give the mixture a stir. Allow the lychee tea to cool down for a few minutes. Then, transfer it to the refrigerator to chill further. You can also add ice cubes directly to the tea to speed up the chilling process.
  • Once the tea is cold, serve it over ice cubes. Garnish (optional): If desired, you can garnish your lychee tea with fresh lychee slices and mint leaves for an extra touch of freshness.

Notes

  • If using fresh lychee, you will need to add simple syrup, lychee syrup, or extra sweeteners, like agave or honey, when blending the lychee. 
    • For fresh lychee: blend 1 cup lychees (skin and pits removed) with ¼ cup honey or agave syrup (or lychee syrup) + 2 tbsp water (add more sweetener as desired)
