1/2cupPlain Cashew Yogurt (or plain dairy-free yogurt of choice)
4Garlic Cloves, minced
1Small Cucumber, peeled and finely diced (~3/4 cup)
3tbspFresh Dill, chopped
2tbspFresh Squeezed Lemon Juice
2tbspExtra Virgin Olive Oil
1/2tspSea Salt, plus more to taste
Instructions
Peel the skin of the cucumber and finely chop.
Add the ingredients to a bowl. Stir to combine.
Taste and adjust as needed: adding more salt to boost overall flavor, more olive oil for a creamier sauce, dill for more herbaceous flavor, and lemon for more zest.
Notes
You can shred the cucumber and use a clean towel or cheesecloth to squeeze out the excess water. Or you can finely chop the cucumber and use it as is.
