Dairy-Free Tzatziki Sauce (Vegan)

Plain Cashew Yogurt (or plain dairy-free yogurt of choice)
Garlic Cloves, minced
Small Cucumber, peeled and finely diced (~3/4 cup)
Fresh Dill, chopped
Fresh Squeezed Lemon Juice
Extra Virgin Olive Oil
Sea Salt, plus more to taste
Peel the skin of the cucumber and finely chop.
Add the ingredients to a bowl. Stir to combine.
Taste and adjust as needed: adding more salt to boost overall flavor, more olive oil for a creamier sauce, dill for more herbaceous flavor, and lemon for more zest.
You can shred the cucumber and use a clean towel or cheesecloth to squeeze out the excess water. Or you can finely chop the cucumber and use it as is.
Store in an airtight container in the fridge for up to 3 days.
