Ingredients

  • 1/2 cup Plain Cashew Yogurt (or plain dairy-free yogurt of choice)
  • 4 Garlic Cloves, minced
  • 1 Small Cucumber, peeled and finely diced (~3/4 cup)
  • 3 tbsp Fresh Dill, chopped
  • 2 tbsp Fresh Squeezed Lemon Juice
  • 2 tbsp Extra Virgin Olive Oil
  • 1/2 tsp Sea Salt, plus more to taste

Instructions

  • Peel the skin of the cucumber and finely chop.
  • Add the ingredients to a bowl. Stir to combine.
  • Taste and adjust as needed: adding more salt to boost overall flavor, more olive oil for a creamier sauce, dill for more herbaceous flavor, and lemon for more zest.

Notes

  • You can shred the cucumber and use a clean towel or cheesecloth to squeeze out the excess water. Or you can finely chop the cucumber and use it as is.
  • Store in an airtight container in the fridge for up to 3 days.
