Slice and prepare the potatoes as directed above.
Brush the garlic-herb butter onto both sides of the potatoes. Save at least a third of the garlic butter sauce to use later.
Place the potato slices in a single layer in the basket of the air fryer. (Do not layer the potatoes on top of each other).
Cook at 400°F for 15 minutes. Then flip the potatoes and cook for another 10 minutes at 400°F.
Flip the potatoes once more, brush the tops with the garlic butter mixture, and cook in the air fryer for an additional 7-10 minutes at 400°F. Once they are done the potatoes will have crispy edges and a golden brown center.
Squeeze lemon juice over the cooked potatoes and garnish with parsley (and parmesan cheese, if desired). Enjoy!
