- 1 lb Baby potatoes halved
- 2 tbsp Avocado Oil or Olive oil
- 2 tsp Herbs de Provence (or Italian seasoning)
- 1 tsp Garlic powder
- Salt and pepper to taste
- Chopped parsley for garnish
Preheat air fryer to 400F for 3-5 minutes.
Cut the baby potatoes in half lengthwise. Add the potatoes to a large bowl and season with olive oil, dried herbs, garlic powder, salt, and pepper.
Add the potatoes to the air fryer basket. Cook potatoes for 20 minutes, flipping halfway through.
Squeeze lemon juice over cooked potatoes and garnish with parsley before serving.
**Please Note: Cooking Time may vary based on the type of air fryer you use. Adjust time accordingly and monitor the potatoes while cooking. I have made this recipe in an Instant Vortex Air Fryer and a Yedi 7 QT air fryer.
