Preheat the air fryer to 360°F for 3-5 minutes. When heated, spray the basket with cooking spray.
In a shallow bowl, combine the seasonings, flour, and cornstarch. In a separate shallow bowl, combine the breadcrumbs, and shredded coconut.
Working with one at a time, dip shrimp in flour, then eggs, then coconut mixture.
Place shrimp in the basket of an air fryer making sure to leave space between each. Bake until shrimp is golden and cooked through, 10 to 12 minutes. Work in batches as necessary.
Garnish with green onion or parsley and serve with Chipotle Crema or your favorite dipping sauce. Enjoy!
