Air Fryer Coconut Shrimp is mouthwatering restaurant-style coconut shrimp made quick and easy for a delicious entrée or appetizer. This gluten-free shrimp recipe does not require deep frying but it still has that crispy, flavorful crunch you expect!

Ingredients

  • 1 lb Shrimp raw, large, peeled and deveined with tails attached
  • 2 Eggs, lightly beaten large
  • Cooking spray

Flour Mixture

  • 1/4 cup {Gluten-Free} All-purpose flour (can sub regular flour)
  • 1 tbsp Corn starch
  • 1/2 tsp Salt
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Smoked paprika
  • 1 tsp Black pepper

Coconut Mixture

  • 1 cup Shredded coconut unsweetened
  • 1/2 cup {Gluten-Free} Breadcrumbs can use gluten-free or regular

Dipping Sauce For Serving

Instructions

  • Preheat the air fryer to 360°F for 3-5 minutes. When heated, spray the basket with cooking spray.
  • In a shallow bowl, combine the seasonings, flour, and cornstarch. In a separate shallow bowl, combine the breadcrumbs, and shredded coconut. 
  • Working with one at a time, dip shrimp in flour, then eggs, then coconut mixture.
  • Place shrimp in the basket of an air fryer making sure to leave space between each. Bake until shrimp is golden and cooked through, 10 to 12 minutes. Work in batches as necessary.
  • Garnish with green onion or parsley and serve with Chipotle Crema or your favorite dipping sauce. Enjoy!
