- 1 lb Ground Chicken
- 1/4 cup Red Onion, finely minced
- 4 Garlic Cloves, minced
- 1/3 cup Fresh Parsley, finely chopped
- 3 tbsp Fresh Mint, finely chopped
- 1 tsp Ground Coriander
- 1 tsp Dried Oregano
- 1 tsp Ground Cumin
- 1/2 tsp Red Pepper Flakes, optional
- 1/4 cup Almond Flour optional
- 1 Large Egg
- Salt and Pepper, to taste
Line a baking sheet with parchment paper. Preheat the oven to 400°F.
Combine the ingredients in a large bowl.
Roll the mixture into 1 1/2" meatballs.
Place on the baking sheet, making sure there is space between each meatball. Bake for 20-25 minutes, or until golden brown and cooked all the way through. (an instant thermometer inserted into the meatball should read 165°F when fully cooked)
Garnish with fresh parsley. Serve with your favorite side dishes. Enjoy!
