Ingredients

  • 1 lb Ground Chicken
  • 1/4 cup Red Onion, finely minced
  • 4 Garlic Cloves, minced
  • 1/3 cup Fresh Parsley, finely chopped
  • 3 tbsp Fresh Mint, finely chopped
  • 1 tsp Ground Coriander
  • 1 tsp Dried Oregano
  • 1 tsp Ground Cumin
  • 1/2 tsp Red Pepper Flakes, optional
  • 1/4 cup Almond Flour optional
  • 1 Large Egg
  • Salt and Pepper, to taste

Instructions

  • Line a baking sheet with parchment paper. Preheat the oven to 400°F.
  • Combine the ingredients in a large bowl.
  • Roll the mixture into 1 1/2" meatballs.
  • Place on the baking sheet, making sure there is space between each meatball. Bake for 20-25 minutes, or until golden brown and cooked all the way through. (an instant thermometer inserted into the meatball should read 165°F when fully cooked)
  • Garnish with fresh parsley. Serve with your favorite side dishes. Enjoy!

Making these meatballs in the air fryer is super easy! After forming the meatballs, place them in the air fryer basket in a single layer with space in between each (work in batches if necessary). Cook the meatballs at 400°F for 12-15 minutes, flipping halfway through. An instant thermometer inserted into the meatball should read 165°F+ when the chicken is fully cooked.
