Pumpkin Energy Balls- A Delicious Healthy Dessert!

It’s officially fall!! This is the time of year for big sweaters, cozy blankets, warm drinks, and savory treats!

This Pumpkin Energy Ball Recipe is for all the pumpkin lovers. It’s an easy, delicious, no-bake recipe that takes 5 minutes to blend and put together. It’s perfect for all the festivities fall has in store- the pumpkin patch parties, costume parties, Thanksgiving celebrations, bonfires, and more.

For those who haven’t tried a no-bake recipe yet, get ready for your mind to be blown! No-bake desserts are the perfect way to make rich, flavorful treats in minutes! These recipes are also perfect for non-bakers like myself, because there is absolutely no way that you can mess it up! Simply combine the ingredients and form into a small ball, then refrigerate until it’s time to enjoy!

Not only is this Pumpkin Energy Ball recipe VERY easy to make, but it is also healthy and filled with tons of protein, omega-3s, antioxidants, and fiber. The sliced almonds, almond butter, chia seeds, coconut shavings, cinnamon, and pumpkin are very nutritious! The special thing about this recipe is that you can also add whichever superfood ingredients you like: goji berries, cacao, dried cranberries, or dried blueberries and it would still turn out just as delicious! That is why this treat checks everything off of my list: healthy AND delicious.

If you’re looking for ideas to bring to the upcoming potluck, for a Halloween treat (kids love them!), thanksgiving dessert, or just to have as a healthy snack option, then these bites are perfect. These are also great for breakfast and pair perfectly with your Pumpkin Spice latte ;). I actually like to eat these after my run to have a sweet snack that will refuel me with good carbs and proteins.

Store the Pumpkin Energy Balls in an airtight container in the refrigerator and they last up to a week!

Lastly, these snacks are also GLUTEN Free & Vegetarian. Also, if you’re not a huge pumpkin lover I would still give these a try. The pumpkin taste is subtle and just adds a bit of savory sweetness.

Servings: 8

Ingredients:

Base Ingredients

  • 2 cups Rolled Oats
  • 1/2 cup Pumpkin Puree
  • 1/4 cup Almond Butter
  • 3 tbsp Chia Seeds
  • 1/2 tsp Cinnamon
  • 1 tsp vanilla or almond extract
  • 2 tbsp honey

Optional Ingredients

  • 1/2 cup Sliced Almond
  • 1/4 cup dark chocolate chips
  • Coconut Shavings

Instructions:

  1. Combine all the base ingredients into the food processor. Blend for 1-2 minutes until the ingredients are mixed well together into a thick consistency.
  2. Add optional ingredients and blend for 30 seconds to mix the ingredients.
  3. Scoup out a tbsp portion size and roll into a ball. Next, cover each ball with coconut shavings.
  4. Refrigerate for 30-45 minutes.

Tip: subsitute any of the optional toppings as you like. Simply add 1/4 of your favorite ingredients, like goji berries, dried cranberries, white chocolate chips, etc.
