Accordion Potato Skewers are the best! I love potatoes in any shape, form, or fashion, but having them stretched out, revealing a seemingly intricate pattern, makes them even more enjoyable!

Accordion potatoes are perfect if you want to elevate your normal potato side dish! With such an eye-catching shape, they are perfect for an impressive dish to wow your guest! And get this, they are SUPER easy to make!

It took me a couple of tries to get into the groove of slicing the potatoes, but once I did, I was able to make the perfect accordion shape each time! So here is a step-by-step recipe walk-through so you can make them perfectly! I promise you, it’s much easier to make than it looks!

What You Need To Make Accordion Potato Skewers:

Potatoes: You can use whatever potatoes you prefer. I used russet potatoes. Yukon Gold and sweet potatoes also work well for this recipe.

Garlic Butter Mixture: The garlic herb mixture coats the potatoes and provides a ton of flavor. You can use vegan butter if you prefer, or you can swap out the butter and use olive oil.

Skewers: The skewers help to serve as a base for cutting the potatoes so that you can make the accordion pattern. You also pierce the potatoes with the skewers, then stretch the potatoes and curve them to create the complete accordion look. (If you have time, soak the skewers in water for at least 30 minutes before using to prevent them from burning while in the oven.)

How To Make Accordion Potatoes?

First, thoroughly clean the potatoes. I use 4 large russet potatoes for this recipe.

How To Cut Accordion Potatoes?

  1. Peel the potatoes. Then, cut the ends of the potatoes. Cut the potato lengthwise into 1/4 – 3/8 inch slices. Do not cut larger than 1/2 inch. Larger slices are slightly harder to manipulate and also do not get as crispy when baked.
  2. Place the potato horizontally. Place the skewer on both sides of the potato. Use skewers as a base so that you do not cut all the way through the potato and cut vertical lines. Keep the lines close to each other so you make the accordion shape. (For those that like to get technical, try to keep the lines no more than 1/16 inches apart.) 🙂
  3. In the same fashion, flip the potato over and cut diagonal lines
  4. Push the skewer through the potato. (I find it best to leave the potato on the cutting board, place my hand over the potato to hold it down, and gently push the skewer through the center of the potato. Please be careful so that you do not pierce yourself with the skewer.)  Gently stretch out the potato, starting with the bottom and work towards the middle. 
  5. While you are slicing the potatoes, keep the potatoes that you have already cut in cold water. This helps to keep the potatoes from turning brown. This also helps to break down the excess starch which will help make delicious crispy potatoes when they are baked.
  6. Now, brush the garlic-herb butter onto both sides of the potatoes.

How To Make Crispy Accordion Potatoes?

Once both sides of the potato skewers are coated with the butter mixture, it is time to transfer them into the oven. Place the potatoes in a pre-heated oven at 400°F for about 40 minutes flipping gently halfway through. Depending on the size you cut the potatoes, they may need more time (+5 minutes or so) in the oven to get crispy. Once they are done the potatoes will have crispy edges and a golden brown center.

How to Make Accordion Potatoes in the Air Fryer

Follow the same direction as above. When ready to cook your accordion potatoes place them in the air fryer at 375°F for 15-17 minutes, gently flipping halfway through.

Toppings For Your Accordion Potatoes

  • Ketchup: You can use regular ketchup or spice your ketchup a bit by adding Sriracha and curry power. Simply mix together: 3 tbsp ketchup, with 3 tbsp Sriracha, and 1/2 tsp curry powder! It’s delicious!
  • Cheese: Add shredded cheddar or parmesan cheese for additional flavor. You can also use vegan cheese or mix nutritional yeast into the garlic butter mixture.
  • Ranch Dressing: Yes, some people dip their potatoes in ranch dressing! You can use regular ranch dressing. or try my Hemp Seed Ranch for a nutrient-dense tasty ranch option.
  • More Sauces: You can dip your potatoes in whatever you fancy. Try BBQ sauce, mustard, hot sauce, or avocado crema.

Can You Make These Accordion Potato Skewers Ahead?

Most definitely! If you would like to make this dish ahead, simply slice the potatoes, cover them with water in a large bowl, and place keep the bowl in the fridge. You can leave the potatoes covered in water in the fridge for up to 3 days.

How To Store Leftover Potato Skewers?

If you happen to have any potato skewers leftover, you can store them in an airtight container and place them in the refrigerator for up to 2 days. The best way to rewarm these potato skewers is in the oven. Place them in a pre-heated oven at 350°F for 5 minutes, or until heated through. They will be just as crispy and delicious as when you first made them!

How to Make Accordion Potatoes in the Air Fryer
Follow the same direction as above. When ready to cook your accordion potatoes place them in the air fryer at 375°F for 15-17 minutes.
Tips to Making The Best Accordion Potatoes:
  • Slice the potatoes relatively thin for easy manipulation and helps to get crispy potatoes when baked. 3/8-1/4 inch or smaller works best.
  • When flipping the potato skewers, be gentle.
  • Allow the skewers to cool before enjoying (about 5 minutes). This helps to maintain their shape. 
  • Rewarm any leftover potato skewers in the oven for best results. 
Substitutions
  • Can Sub Vegan Butter or Olive Oil for regular butter.
  • Can sub Rosemary for parsley if you would like to make accordion potatoes with rosemary and garlic butter/oil.

    1. Hi MJ! In the recipe tips and instruction written in the blog post I share tips on how to get the skewer through the potato:

      I find it best to leave the potato on the cutting board, place my hand over the potato to hold it down, and gently push the skewer through the center of the potato. Please be careful so that you do not pierce yourself with the skewer.

      You can also try slicing the potatoes closer to the 1/2 inch size if you still find it challenging to get the potato through the skewer. Hope that helps!

        My son and I had this same issue of being unable to skewer. It took way to much effort to get the wooden skewer through the potato. It just didn’t want to go through at all after about an inch. Standard russet potato, about 5 inches long, about a bit more than 1/4 inch thick slices. We finally gave up after 20 minutes of trying various techniques so I came here to see what others experienced.
        (We googled and watched a video but laughed when all it showed was pushing the skewer in about an inch…then moved on to show the whole skewer finished…we wondered how many long minutes were cut.)
        My son plans to continue the experimenting but I just got out a bag of Tater Tots and called it a day for that meal.
        I like the recipe concept a lot, just wondering how others are being successful at it.

        1. Hi Bh, it is unfortunate that you rated the recipe poorly because you were unable to successfully do it. I’d love to offer tips to help if you want to try again. I found that when making these potatoes, cutting them into thicker slices helped. Also, when pushing the skewer through, try to keep the potato as compact as possible; do not stretch out the potato yet. Also, try holding the potato down with your palm on a cutting board for stability and push the skewer through the center, starting with the thickest side. Good luck to you and your son if you try to make them again.
